Since I’ve been back in Quincy I’ve enjoyed trying out a bunch of recipes. It’s so much fun when you have a proper (read: not shared) kitchen at you disposal! So, here are some of the dishes I’ve made (and they’re all vegetarian).

This is a vegetable taco, which can be easily gluten-free if you use corn tortillas. I used yellow zucchini, onion, bell pepper, and mushrooms. Recipe from Martha Stewart here.

Also from Martha Stewart’s recipe I made these mushroom turnovers. The recipe calls for frozen puff pastry, which makes these really quick (if you remember to set the dough out to thaw).

This recipe is from the Five and Spice blog. It’s a nice combination of spring vegetables and tarragon. I put it on pasta to make it a main dish.

I certainly want to keep expanding my skills and cooking delicious food stuffs.
